This granola I made for a friend, so I added some oats. |
Because lack of time I could not post anything during the last 3 months. First I was preparing myself for an exam and later I had many things to do.
About 2 months ago I decided to reduce my gluten intake and try paleo diet. I decided to do some trials and see if it is the best choice for me, but I am not avoiding bread or homemade pasta (yes, me and my husband prepare pasta at home).
During my search for recipes I found a recipe to try at Eat and Drink paleo , but I found it too sweet and I did not like the chia seeds. So, I decided to adapt to my taste.
Ingredients:
500 g - dried fruits (Lidl pack - apricot, prunes, apple rings, peach and pears)
132 g - Brazil nuts
200 g - walnuts
62 g - sunflower seeds
50 g - pumpkin seeds
75 g - desiccated coconut
2 tbsp - honey
50 mL - Apple juice 6X concentrated (no sugar added)
100 mL - water
Instructions:
Pre-heat the oven at 180 C
Put the dried fruits in a processor and chop them into the desired size crumbs and reserve. Do the same with the nuts.
In a big bowl mix all the dried ingredients.
Stir together the apple juice, water and the honey. Then pour over the dried ingredients and stir to coat.
Grease a baking tray with vegetable oil (I use olive oil), spread the mixture out evenly and then flatten with a spatula.
Bake for about 15 minutes. After that, stir the mixture and then repeat the process after 10 minutes.
Sometimes the granola requires more time, so bake for another 5 minutes.
Finally, after the granola cooled down, store it in an air-tight container.
I usually keep my granola in the fridge.
