Pasta a lá Peter

This week my husband decided to make Bolognese sauce for pasta. However, we are very alike and most of time we do not follow a recipe, but adapt it for what we want.
Unfortunately, I could not take a photo because of technical problems, but, hopefully, I will take it next time that we make this sauce and will post it here. 


The first time he adapted the recipe he did not like and said that it had too much vegetable, but this time he was so proud of his recipe that he wrote it and gave it to me so I could post it here.
Therefore, this week post will be Pasta a lá Peter.

Ingredients:
2 tins chopped tomatoes
2 tins tomatoes with onions and garlic
1 tube tomato pure
1/2 jar mixed herbs (we used the ALDI one)
1 bag cashew nuts (grated)
2 onions
400g minced beef
frozzen mixed vegetables/ peas/ sweetcorn
5 cloves of garlic (finely chopped)
Wholegrain pasta

Method:
Put a casserole pan on a medium heat, add a splash of olive oil then fry the onion and garlic. Add the minced beef and break apart any lumps. Cook for about 5 minutes, until start to brown.
Then pour in all the other ingredients. Keep on medium heat until boiling, then reduce to low heat and cover with a lid. Let it cook for about 30 minutes. Remove from the heat and put on the cooked pasta of your choice.
